    Chicken Salad

    Fresh and nutritious, this easy recipe can be part of a whole meal or served as a side.

    Serves 6

    Ingredients

    4 chicken breasts

    1½ cups cream

    4½ oz. celery

    4 oz. green peppers

    1 ounce green onions

    ¾ cup sugar free sweet relish

    ¾ cup mayo

    3 eggs, hard-boiled

    Directions

    1. Place the chicken in an oven-safe pan, and cover it with cream. Cook for 40-60 minutes at 350°F. When it is done, let cool. Discard the liquid.
    2. Chop the celery, pepper and onions, and combine them in a bowl. Dice the chicken and add too.
    3. Add chopped hardboiled eggs and mix gently.
    4. Divide into 6 containers.
