    Keto Caprese Salad

    This simple recipe takes a quick 5 minutes, but is chock-full of fresh flavor.

    Serves 2

    Ingredients

    1 tomato

    6 oz. fresh mozzarella cheese

    ¼ cup chopped fresh basil

    3 tbsp. olive oil

    Freshly cracked black pepper

    Salt

    Directions

    1. Put the fresh basil in a food processor with some oil. Blend until it forms a paste.
    2. Slice the tomatoes and chop the mozzarella. On the top of each tomato, lay the mozzarella and basil paste. Season with olive oil, black pepper and salt.
