    Little Portobello Pizza

    These little pizzas are made from Portobello caps. An original way to finish your day and keep those cravings in check.

    Serves 1

    Ingredients

    3 Portobello mushrooms

    Olive oil

    3 tsp. pizza seasoning

    3 tomato slices

    9 spinach leaves

    1½ oz. mozzarella

    1½ oz. Monterey jack

    1½ oz. cheddar cheese

    12 pepperoni slices

    Directions

    1. Prepare the Portobello mushrooms by washing them, removing both the gills and the stems.
    2. Sprinkle with olive oil and pizza seasoning, and then top with all the other ingredients, except the pepperoni slices.
    3. Cook at 450°F for 6 minutes. Add the pepperoni slices and broil until crispy.
