Chicken Tikka Masala is a super flavorful and delicious curry that you can now make keto style!
Serves 5
Ingredients
1 lb. chicken thighs (boneless/skinless)
2 tbsp. olive oil
2 tsp. onion powder
3 minced garlic cloves
1 inch grated ginger root
3 tbsp. tomato paste
5 tsp. garam masala
2 tsp. smoked paprika
4 tsp. kosher salt
10 oz. diced tomatoes (can)
1 cup heavy cream
1 cup coconut milk
Fresh chopped cilantro
1 tsp. guar gum
Directions
- De-bone the chicken thighs. Chop the chicken into bite-sized pieces.
- In a slow cooker, add the chicken and grate the ginger on top.
- In another bowl, mix the tomato paste and canned tomatoes with the rest of the dry spices. Add ½ cup coconut milk and stir. Add to the slow cooker.
- Cook on low for 6 hours or on high for 3 hours.
- Once finished, add the remaining coconut milk, double cream, and guar gum. Mix.
