A keto twist on the traditional Italian dish that will make your mouth water and your stomach purr with satisfaction.

Ingredients
For the Chicken:
3 chicken breasts
1 cup mozzarella cheese
Salt and pepper
For the Coating:
2½ oz. pork rinds
¼ cup flaxseed meal
½ cup parmesan cheese
1 tsp. oregano
½ tsp. salt
½ tsp. pepper
¼ tsp. red pepper flakes
½ tsp. garlic
2 tsp. paprika
1 egg
1½ tsp. chicken broth
The Sauce
¼ cup olive oil
1 cup tomato sauce
½ tsp. garlic
½ tsp. oregano
Salt and pepper
Directions
- In a food processor, grind up the pork rinds, parmesan cheese and spices.
- Slice the chicken breasts into thirds, and season them with salt and pepper.
- In another bowl, make the coating: whisk eggs and add the chicken broth.
- Begin to make the sauce by combining all the sauce ingredients in a saucepan and whisking. Let simmer for 20 minutes.
- Bread the chicken slices: dip them into the egg mixture and then into the pork rind coating. Place on a piece of foil.
- In a pan, heat a few tbsp. of olive oil and fry the chicken. Place the fried chicken into a casserole dish, cover with sauce and cheese. Bake for 10 minutes at 400ñF.
