    Keto Parmesan Chicken

    A keto twist on the traditional Italian dish that will make your mouth water and your stomach purr with satisfaction.

    Serves 4

    Ingredients

    For the Chicken:

    3 chicken breasts

    1 cup mozzarella cheese

    Salt and pepper

    For the Coating:

    2½ oz. pork rinds

    ¼ cup flaxseed meal

    ½ cup parmesan cheese

    1 tsp. oregano

    ½ tsp. salt

    ½ tsp. pepper

    ¼ tsp. red pepper flakes

    ½ tsp. garlic

    2 tsp. paprika

    1 egg

    1½ tsp. chicken broth

    The Sauce

    ¼ cup olive oil

    1 cup tomato sauce

    ½ tsp. garlic

    ½ tsp. oregano

    Salt and pepper

    Directions

    1. In a food processor, grind up the pork rinds, parmesan cheese and spices.
    2. Slice the chicken breasts into thirds, and season them with salt and pepper.
    3. In another bowl, make the coating: whisk eggs and add the chicken broth.
    4. Begin to make the sauce by combining all the sauce ingredients in a saucepan and whisking. Let simmer for 20 minutes.
    5. Bread the chicken slices: dip them into the egg mixture and then into the pork rind coating. Place on a piece of foil.
    6. In a pan, heat a few tbsp. of olive oil and fry the chicken. Place the fried chicken into a casserole dish, cover with sauce and cheese. Bake for 10 minutes at 400ñF.
