    Cheeseburger Soup with Bacon

    Cheeseburger soup? With bacon? Yeah, you’re just going to have to trust us on this one.

    Serves 5

    Ingredients

    5 slices bacon

    12 oz. ground beef

    2 tbsp. butter

    3 cups beef broth

    ½ tsp. garlic powder

    ½ tsp. onion powder

    2 tsp. brown mustard

    ½ tsp. red pepper flakes

    1 tsp. chili powder

    1 tsp. cumin

    2½ tsp. tomato paste

    1 medium dill pickle, diced

    1 cup shredded cheddar cheese

    3 ounce cream cheese

    ½ cup heavy cream

    1½ tsp. salt

    ½ tsp. black pepper

    Directions

    1. Cook the bacon in a frying pan until crispy. Remove and crumble into a small bowl.
    2. In the leftover bacon fat, brown the ground beef.
    3. Transfer the meat into a soup pot, adding both butter and spices. Let the butter melt.
    4. Incorporate beef broth, tomato paste, cheese and pickles and cook until melted. Cover the pot, turn to low heat and simmer for 20 minutes more.
    5. Turn the stove off, and add the double cream and crumbled bacon. Mix well.
