Low Carb Chicken Nuggets

    This is a different take on the traditional nugget, but you may just end up loving it even more.

    Serves 4


    For the Nuggets:

    24 oz. chicken thighs

    1 egg

    For the Crust:

    1½ oz. pork rinds

    ¼ cup flax meal

    ¼ cup almond meal

    Zest of 1 lime

    ⅛ tsp. garlic powder

    ¼ tsp. paprika

    ¼ tsp. chili powder

    ⅛ tsp. onion powder

    ⅛ tsp. cayenne pepper

    ¼ tsp. salt

    ¼ tsp. pepper

    For the Sauce:

    ½ cup mayonnaise

    ½ avocado

    ¼ tsp. garlic powder

    1 tbsp. lime juice

    ⅛ tsp. cumin

    ½ tsp. red chili flakes


    1. Dry the chicken and cut into bite-size pieces.
    2. Put all the crust ingredients into a food processor and mix.
    3. In a bowl place the crumbs and a whisked egg in a different one. Dip the chicken into the egg, the crust and then lay on a greased baking sheet. Bake for 15-20 minutes at 400°F.
    4. To make the sauce, just mix all the sauce ingredients together.
