You won’t believe it: sushi for your keto diet! Here is a simple recipe you can use for movie nights with family and friends.
Serves 3
Ingredients
16 oz. cauliflower
6 oz. softened cream cheese
1-2 tbsp. unseasoned rice vinegar
1 tbsp. soy sauce
5 sheets nori
1-½-inch length of cucumber
½ avocado
5 oz. smoked salmon
Directions
- Rice the cauliflower with a food processor.
- Cut each cucumber into thin lengthwise slices. Keep in the fridge until ready.
- Cook the cauliflower rice in a hot pan until almost tender. Season with soy sauce. When it is done, mix in a bowl with cream cheese and rice vinegar, and set in the fridge until cool.
- Thinly slice the avocado.
- Place a nori sheet on a bamboo roller. Spread some of the cauliflower over the nori sheet to almost cover. Layer the cucumber, avocado and salmon on one end. Roll tightly.
