    Stuffed Peppers

    This easy recipe includes a delicious combination of vegetables, mushrooms and pork. Stuffed pepper never tasted so good!

    Serves 1

    Ingredients

    4 poblano peppers

    1 lb. ground pork

    1 tbsp. bacon fat

    1 tsp. cumin

    1 tsp. chili powder

    ½ onion

    1 tomato

    7 baby bella mushrooms

    ¼ cup packed cilantro

    Salt and pepper

    Directions

    1. In the oven, broil the poblano peppers for approximately 8-10 minutes.
    2. Brown the pork in bacon fat. Season with salt, pepper, cumin and chili.
    3. Incorporate the diced onion and minced garlic. Mix everything together and add the sliced mushrooms. Once they absorb all the fat in the pan, add the chopped cilantro and tomato. Cook for 12 minutes.
    4. Put the mixture into the peppers, and bake for 8 minutes at 350°F.
