    Amaretti Cookies

    These cookies are easy to make and can feed a mini horde. Or just you, for a few days!

    Serves 16 cookies

    Ingredients

    1 cup almond flour

    2 tbsp. coconut flour

    ½ tsp. baking powder

    ¼ tsp. cinnamon

    ½ tsp. salt

    ½ cup erythritol

    2 eggs

    4 tbsp. coconut oil

    ½ tsp. vanilla extract

    ½ tsp. almond extract

    2 tbsp. sugar-free jam

    1 tbsp. coconut, shredded

    Directions

    1. Combine all the dry ingredients.
    2. Add the wet ingredients. Mix well.
    3. In a parchment paper lined on a baking sheet, form the cookies. Make a dent in the middle of each one of them. Bake at 400°F for about 16 minutes. Let them cool.
    4. Add in each indent a little bit of jam, and top with a sprinkle of shredded coconut.
