Avocado Ice Cream with Chocolate

This original avocado ice cream also has an exciting chocolate element that will go down a treat with friends and family.

Serves 6


2 avocados

1 cup coconut milk

½ cup heavy cream

½ cup cocoa powder

2 tsp. vanilla extract

½ cup powdered erythritol

25 drops liquid stevia

6 squares unsweetened baking chocolate


1. In a bowl, add avocado, coconut milk, cream and vanilla extract. Mix with an immersion blender until smooth.

2. Add the powdered erythritol, stevia and cocoa powder. Mix well.

3. Break the baking chocolate and incorporate to the mixture.

4. Place in the fridge for 6-12 hours. Remove 20 minutes before serving and add the mixture to the ice cream machine, following the manufacturer’s instructions.
