    Mocha Ice Cream

    Don’t be fooled into thinking that you can’t eat ice cream on a keto diet! Of course you can!

    Serves 2

    Ingredients

    1 cup coconut milk

    ¼ cup heavy cream

    2 tbsp. erythritol

    16 drops liquid stevia

    2 tbsp. cocoa powder

    1 tbsp. instant coffee

    ¼ tsp. xanthan gum

    Directions

    1. Add all the ingredients (except the xanthan gum) into an immersion blender. Blend.

    2. Add xanthan gum while blending. Keep blending until the mixtures slightly thickens.

    3. Put in the ice cream machine and follow the manufacturer’s instructions.
