These bites are not only ridiculously delicious but also packed with healthy fats to keep you full and satisfied. They’re the perfect guilt-free treat to conquer your sweet tooth and a guaranteed hit with anyone, keto or not!

Ingredients

• 2½ cups / 280g almond flour
• ½ cup / 128g creamy peanut butter
• ¼ cup / 60ml coconut oil, melted
• ¼ cup / 48g granular erythritol
• 3 tbsp / 45ml sugar-free maple syrup
• 1 tbsp / 15ml vanilla extract
• 1 ½ tsp / 6g baking powder
• ½ tsp / 3g salt
• 7 oz / 200g dark chocolate, 70% cacao or higher, broken into squares

Instructions

1. Directions
2. In a large bowl, whisk together the creamy peanut butter, melted coconut oil, sugar-free maple syrup, and vanilla extract until smooth.
3. In a separate medium bowl, combine the almond flour, erythritol, baking powder, and salt.
4. Sift the dry into the wet and mix with a spatula until a cohesive dough forms. The dough will be slightly sticky.
5. Cover the bowl and refrigerate the dough for at least 30 minutes to firm up, which will make it much easier to handle.
6. Preheat your oven to 350°F / 175°C and line a large baking sheet with parchment paper.
7. Scoop about 1 tablespoon of chilled dough and roll it into a ball. Flatten it in your palm, place a square of dark chocolate in the center, and carefully wrap the dough around the chocolate, sealing it completely. Roll it back into a smooth ball.
8. Place the stuffed dough balls on the prepared baking sheet, leaving about 2 inches between each one.
9. Bake for 13-15 minutes, or until the edges are lightly golden. They will appear soft and underdone but will firm up as they cool.
10. Let the bites cool on the baking sheet for 10 minutes before carefully transferring them to a wire rack to cool completely.

Pro Tips

• If the dough is too sticky to handle even after chilling, lightly wet your hands or grease them with a little coconut oil before rolling the balls.
• For a different flavor, swap the peanut butter for almond butter or sunflower seed butter. Add a pinch of cinnamon to the dry for a warm spice note.
• Use a high-quality dark chocolate (85% cacao or higher) for a richer flavor and lower carb count. Sugar-free chocolate chips also work well.
• Store these bites in an airtight container in the refrigerator for up to a week. They are delicious served chilled or at room temperature.
