    Egg Cups

    Serves: 4

    Preparation time: 15 minutes

    Ingredients:

    4 eggs
    1 cup onion, diced
    1 cup bell pepper, diced
    1 cup mushrooms, diced
    1 cup tomatoes, diced
    ½ cup cheddar cheese, shredded
    ¼ cup half and half
    Salt and pepper to taste
    2 tablespoons cilantro, chopped
    Preparation:

    Combine all the ingredients in a bowl.
    Divide the mixture into 4 glass jars.
    Put on the lids but do not close tightly.
    Pour 2 cups of water into the Instant Pot.
    Place a steamer rack inside the pot.
    Put the jars on top of the rack.
    Cover the pot.
    Set it to manual.
    Cook at high pressure for 5 minutes.
    Release the pressure quickly.
    Serving Suggestion: You can also set aside some cheese and use it for topping.

    Tip: Use different colored bell peppers to make the dish colorful.
