Preparation time: 30 minutes
1.5 pounds ground white chicken,
1 cup almond flour
½ cup parmesan cheese
½ cup full cream milk
Salt and black pepper
½ tsp. dried oregano
1 cup marinara sauce
3 ounces fresh mozzarella cheese
Preparation: Pre-heat the oven to 375°F. Grease a glass, ovenproof dish and set aside. In a large bowl mix together half of the almond flour, the parmesan cheese, whole milk, seasonings and herbs, and the chicken and stir. Divide into 24 portions and roll into a ball. Rolle in the rest of the almond flour and place in the dish. Bake for 15-20 minutes and then add a spoonful of marinara sauce and slice of mozzarella cheese. Cook for 10 more minutes. Sprinkle with dried oregano and enjoy.
Serving Suggestion: This is a great dinner to be served with a rice pilaf.
