Rolls of Zucchini and Salmon

    Serves: 2-3

    Preparation time: 35 minutes


    2 medium zucchini
    A 5 ounce can pink or red salmon
    1 small avocado
    2 tbsp. mayonnaise
    1 small chili pepper
    3 tsp. lime juice
    Salt and pepper
    Paprika or cayenne pepper to garnish
    Preparation: Slice the zucchini thinly lengthways using a potato peeler. Drain the salmon and mix with other ingredients. Place a small spoonful of the fish mixture at one end of each zucchini slice and roll it up using a toothpick to secure it. Garnish with salt and pepper. Use a tooth pick to secure the end if necessary and serve immediately

    Serving Suggestion: You can switch the salmon for tuna, crab meat, or any other seafood meat you have on hand.
