Preparation time: 35 minutes
2 pounds chicken breast meat
1 cup grated parmesan cheese
2 tbsp. chopped herbs, thyme or parsley
Salt and pepper to taste
1 tsp. powdered chili pepper
4 ounces butter
4 cloves garlic, finely chopped
Preparation: Pre-heat the oven to 350°F and grease a baking sheet with butter. Brown the chopped garlic with butter. Mix the cheese herbs and chili pepper on a plate. Cut the chicken into 20 or so fingers and dip into the cheese mixture. Place on the baking sheet and cook for 25 minutes or until golden brown. Turn halfway through for even cooking.
Serving Suggestion: This meal can be stored in the fridge if you are prepping meals beforehand and can easily be warmed up by microwave while on a quick lunch break.
