Ingredients:
3 ounces ground flax seed
1½ tsp. baking powder
2 tbsp. Italian seasoning
8 fresh eggs, lightly beaten
8 ounces mozzarella cheese, shredded
½ cup grated parmesan cheese
7 ounces pepperoni, finely diced
Salt and pepper to taste
Preparation: Pre-heat the oven to 375°F and grease 12 muffin cups. Mix together the flax seed, baking powder, Italian seasoning and salt and pepper. Add the beaten eggs along with the cheeses and pepperoni. Spoon into the cups and cook for about 20 minutes.
Serving Suggestion: These Italian-flavored dinner is hearty enough to stand on its own. You can however, combine with a simple salad as well.
