Preparation time: 25 minutes
1 pound fresh mozzarella cheese
2 large garlic cloves, crushed
½ tsp. salt
½ cup olive oil
Fresh oregano and basil, finely chopped
Preparation: Heat a frying pan on medium heat and cut the cheese into long rectangles about 1/4th of an inch thickness. Squeeze the juice from the fresh lemons to get about 4 tablespoons of fresh juice. In a small bowl, mix the garlic and salt and then add the lemon juice to make a paste. Add the ½ cup of olive oil until you get a substance that has the consistency of mayonnaise. Toss the cheese batons in this mixture and then place on the frying pan and fry for 2 – 3 minutes, turning halfway through. Remove from the heat, place on a serving platter and sprinkle with basil and oregano before serving.
Serving Suggestion: A simple tomato marinara sauce is a great, low-carb dressing for these sticks.
