Beef Jerky from Ground Meat

Serves: 4

Preparation time: 1 hour

Ingredients:

3 pounds ground beef
3 tbsp. salt
4 tbsp. light soy sauce
Olive oil
Spices of your choice
Preparation: Mix the salt into the beef in a large bowl. Oil the base of two large deep baking sheets with olive oil and then press the beef into the sheets dividing it evenly between the two. It should not be more that ¼ inch thick. Season the beef with the soy sauce and other desired seasonings before placing in a low oven at 150°F. Leave to dry out overnight, or for about 10 hours, until the jerky has hardened. Pour off any fat that may have accumulated.

Serving Suggestion: Once cooled, break into acceptable slices and then place in plastic bag in the fridge. While this will take a long time to make, it can be stored in the fridge for a quick snack for months.
