Ingredients:
12 large free range fresh eggs
8 slices of bacon
½ cup mayonnaise
1 tsp. mustard powder
1 tbsp. powdered cumin
Salt and freshly cracked black pepper
Paprika for dusting
Preparation: After hard boiling the eggs, fry the bacon slices and drain excess fat with a paper towel. Crumble the bacon. Cut the eggs in half and scoop out yolks to add to the bacon. Add mayonnaise, mustard, cumin, and salt and paper. Mix together with the bacon and egg yolks. Fill the egg white halves, sprinkle with paprika and serve.
Serving Suggestion: These can be prepared ahead of time and be kept in the refrigerator for a quick snack throughout the day.
