Mackerel Salad

    Serves: 3

    Preparation time: 25 minutes


    2 mackerel fillets
    2 large eggs
    1 medium avocado
    2 cups green beans
    4 cups mixed lettuce such as lamb lettuce, arugula, or kale
    1 tbsp. ghee
    ¼ tsp. salt or more to taste
    freshly ground black pepper
    For the lemon and mustard dressing, use:

    2 tbsp. extra virgin olive oil
    1 tsp. Dijon mustard
    2 tbsp. lemon juice
    Preparation: Hard boil the eggs. Cook the green beans for 4-5 minutes. Make small cuts on the side of the mackerel and season with salt and pepper. Heat a pan with ghee and add the fillets. Cook until the skin is crispy and brown. When the eggs are chilled, peel and quarter. Wash the lettuce and dry and place in serving bowl with green beans. Add eggs, sliced mackerel and drizzle with the dressing which is made by simply adding and mixing the three ingredients.

    Serving Suggestion: You could switch the mackerel for any other type of fish you have.
