    MEDITERRANEAN SLAW

    MAKES: 8 servings · PREP TIME: 15 minutes

    The amazing thing about this slaw is that it works with just about any dressing. In fact, it has so much flavor, you just might opt to not add dressing at all. But should you decide to, my favorite is actually a combination of two dressings—Caesar Dressing (here) mixed with balsamic vinaigrette. This slaw is amazing with Creamy Avocado Dressing (here) as well.

    INGREDIENTS

    • 1 (14-ounce) bag coleslaw mix

    • 4 ounces sliced Italian salami, quartered

    • ½ cup sliced and quartered English cucumbers

    • ½ cup chopped canned artichoke hearts

    • ½ cup halved grape tomatoes

    • ¼ cup halved Kalamata olives

    • 2 tablespoons capers

    • 2 tablespoons chopped red onions

    • Sea salt and ground black pepper

    DIRECTIONS

    Put all the ingredients, except the salt and pepper, in a large mixing bowl and toss to combine. Taste and season with salt and pepper. Store leftovers in the refrigerator for up to 3 days.

    tip: If you are not a fan of cabbage or you want to lower the carb count even further, you can substitute shredded lettuce for the coleslaw mix.
