    LEMON AND HERB CHICKEN KEBABS

    MAKES: 8 kebabs (2 per serving) · PREP TIME: 15 minutes · COOK TIME: 10 minutes

    These Greek-inspired lemon chicken kebabs are perfect for grilling indoors or out. They are one of my favorite dishes to bring to get-togethers because they are always a hit.

    INGREDIENTS

    •2 cloves garlic, minced

    •2 tablespoons avocado oil or olive oil

    •1 teaspoon grated lemon zest

    •2 tablespoons fresh lemon juice

    •1 teaspoon chopped fresh oregano

    •1 teaspoon chopped fresh rosemary

    •½ teaspoon chopped fresh thyme

    •1 teaspoon sea salt

    •¼ teaspoon ground black pepper

    •1½ pounds boneless, skinless chicken breasts or thighs, cut into large chunks

    •Lemon wedges, for serving

    •Everything Bagel Aioli (here), for serving (optional)

    SPECIAL EQUIPMENT:

    8 skewers, about 12 inches long

    DIRECTIONS

    1. Put the garlic, oil, lemon zest, lemon juice, oregano, rosemary, thyme, salt, and pepper in a large bowl and whisk to combine.

    2. Add the chicken to the bowl and toss to evenly coat in the oil mixture. Thread the chicken onto the skewers.

    3. Heat a large grill pan over medium heat. Grill the skewers for 5 minutes on each side, or until the chicken is cooked all the way through.

    4. Serve with lemon wedges and aioli, if desired.
