    PEANUT BUTTER CHOCOLATE CHIP NO-BAKE GRANOLA SQUARES

    MAKES: 25 squares (1 per serving) · PREP TIME: 15 minutes, plus 2 hours to refrigerate

    These no-bake granola bars are the perfect sweet treat for an added boost of energy during the day. But they are so good, I dare you to try and just eat one!

    INGREDIENTS

    •1 cup reduced-sugar creamy peanut butter

    •½ cup sugar-free maple syrup

    •2 cups unsweetened coconut flakes

    •½ cup sugar-free dark chocolate chips

    •¼ cup hulled sunflower seeds

    •¼ cup crushed almonds

    •½ teaspoon sea salt

    DIRECTIONS

    1. Put the peanut butter and maple syrup in a large bowl and, using a rubber spatula, mix to combine.

    2. Combine the coconut flakes, chocolate chips, sunflower seeds, crushed almonds, and sea salt in another large bowl.

    3. Pour the nut mixture into the peanut butter mixture and use the spatula to mix until all the ingredients are evenly dispersed and there are no dry patches of coconut flakes.

    4. Line a 10-inch square baking pan with parchment paper. Press the mixture into the pan until it forms a nice even layer. Alternatively, you can free-form it by placing the mixture on a parchment paper–lined baking sheet and shaping it by hand into a 10-inch square, approximately ¾ inch tall.

    5. Refrigerate for 2 hours before serving. Cut into 25 even squares when ready to serve. Store in an airtight container in the refrigerator for up to 2 weeks.

    tip: Switch up this recipe by using any keto-friendly nuts and seeds you prefer. From time to time, I also like to add some Sugar-Free Dried Cranberries (here).
