    STRAWBERRY MOJITO

    Mojitos just scream summer to me. My husband and I love to entertain at home, especially during the summer months. We quadruple this recipe and mix up a pitcher to enjoy with friends out on our back patio. These mojitos are incredibly refreshing, not to mention delicious.

    INGREDIENTS

    •2 strawberries, hulled and sliced, plus more for garnish

    •8 fresh mint leaves, plus more for garnish

    •½ lime, cut into 4 wedges

    •1 tablespoon fresh lime juice

    •2 teaspoons powdered erythritol

    •2 ounces white rum

    •5 ounces club soda

    DIRECTIONS

    1. Fill a 16-ounce highball glass with ice.

    2. Put the strawberries, mint leaves, lime wedges, lime juice, and erythritol in a cocktail shaker and muddle.

    3. Add the rum to the cocktail shaker, then cap and shake.

    4. Pour the mixture over the ice. Top with the club soda.

    5. Garnish with a strawberry and a sprig of mint.
