This aioli is such a delicious and versatile sauce. The mayonnaise makes it creamy while keeping it dairy-free. It is so easy to make, too. I use this aioli for a wide variety of things. It is delicious served as a dip for fresh vegetables or pork rinds. It is also amazing as a low-carb sauce for chicken, fish, or even pork.
INGREDIENTS
•¾ cup mayonnaise, store-bought or homemade (here)
•½ cup chopped roasted red peppers
•6 cloves garlic, minced
•2 tablespoons fresh lemon juice
•A few sprigs of fresh flat-leaf parsley
•¼ teaspoon sea salt, or more to taste
•Pinch of ground black pepper, or more to taste
SPECIAL EQUIPMENT:
Food processor or high-powered blender
DIRECTIONS
Put all the ingredients in a food processor or high-powered blender and pulse until well blended and smooth. Taste and add more salt and/or pepper, if desired. Refrigerate for at least 30 minutes before serving.
