    Strawberry Spinach Salad

    makes 4 servings · prep time: 15 minutes (not including time to cook bacon)

    This salad goes into heavy rotation in my meal plan during the summer months, and I love that I can make it with strawberries from my own garden. To make it a full meal, I love to top it with blackened chicken or salmon. The combination of sweet, savory, and spicy is ah-mazing!

    ingredients

    • 4 packed cups fresh spinach leaves
    • 8 strawberries, sliced
    • 6 slices bacon, cooked crisp and chopped
    • ½ cup crumbled feta cheese
    • 1/3 cup toasted walnuts
    • A few thin slices red onion
    • Strawberry Balsamic Vinaigrette (here), for serving (optional)

    directions

    Combine all of the ingredients in a large serving bowl. Toss with the vinaigrette before serving, if using.
