All the delicious flavors of a classic dinner recipe, but in breakfast form. This is one of my favorite recipes for repurposing leftovers, especially around the holidays. Have leftover Thanksgiving turkey or Christmas ham? This is a great way to repurpose dinner into a delicious breakfast that the whole family will love.
Ingredients
• 10 large eggs
• ¼ cup heavy cream
• 2 cloves garlic, minced
• ½ teaspoon sea salt
• ¼ teaspoon ground black pepper
• 6 ounces Swiss cheese, cut into 8 slices, divided
• 8 ounces chicken breast, cooked and chopped, divided
• 8 ounces ham, chopped, divided
• For serving (optional):
• ¼ cup baby arugula
• ¼ cup cherry tomatoes, halved
• 1 chive, chopped
Directions
1.Crack the eggs into a large mixing bowl and whisk. Add the heavy cream, garlic, salt, and pepper and whisk until well combined.
2.Chop 4 slices of the Swiss cheese and add it to the egg mixture. Mix in half of the chicken and half of the ham.
3.Preheat the oven to 375°F.
4.Heat a large ovenproof skillet over medium heat. Pour the egg mixture into the skillet and cook until the bottom and sides begin to set, about 10 minutes.
5.Top with the remaining cheese slices, chicken, and ham. Transfer the skillet to the oven and bake for 20 minutes, or until the center is set.
6.Before serving, top with the arugula, tomatoes, and chive, if desired.
time-saving tip: Using rotisserie chicken for this recipe is a great way to cut down on time spent in the kitchen. Batch cooking chicken breasts and freezing them in individual portions is another great way to make mealtime a breeze.
