    Pork Chops with Herbed Goat Cheese Butter

    The herbed goat cheese butter in this recipe elevates already tender and juicy pork chops to a whole new level. If you happen to have any leftover butter, it is amazing smeared on Buttery Garlic Crescent Rolls or on top of chicken. I love to serve these pork chops with Sautéed Green Beans with Ham

    Ingredients

    • 2 tablespoons olive oil
    • 4 thick-cut boneless pork loin chops (about 2 pounds)
    • Sea salt and ground black pepper
    • For the herbed goat cheese butter:
    • ¼ cup (½ stick) salted butter, softened
    • ¼ cup fresh (soft) goat cheese
    • ½ teaspoon chopped fresh chives
    • ½ teaspoon chopped fresh flat-leaf parsley
    • ½ teaspoon chopped fresh rosemary
    • ¼ teaspoon chopped fresh thyme
    • ¼ teaspoon garlic powder

    Directions

    1.Heat the olive oil in a large skillet over medium heat. Season the pork chops generously on both sides with salt and pepper.
    2.Place the pork chops in the skillet and sear on both sides until they are golden brown and cooked all the way through, about 6 minutes per side.
    3.While the pork chops are cooking, make the herbed goat cheese butter: Place the butter, goat cheese, chives, parsley, rosemary, thyme, and garlic powder in a small bowl. Mix until the ingredients are well incorporated.
    4.Top each pork chop with one-quarter of the herbed goat cheese butter before serving.
