makes 4 servings · prep time: 10 minutes · cook time: 15 minutes

Why pay high-end steakhouse prices when you can make a perfectly cooked, delicious steak in the comfort of your own home? The cream sauce in this recipe is also delicious on top of broccoli or Brussels sprouts.

    ingredients

    • 4 (8-ounce) New York strip steaks, or boneless steaks of choice (see tip)
    • 2 tablespoons olive oil
    • Sea salt and ground black pepper
    • For the cream sauce:
    • 1 cup heavy cream
    • 1/3 cup Dijon mustard
    • ¼ cup crumbled blue cheese
    • 3 cloves garlic, minced
    • 2 teaspoons dried minced onions
    • For garnish:
    • ¼ cup crumbled blue cheese
    • 1 teaspoon chopped fresh chives

    directions

1.Drizzle the steaks on both sides with the olive oil and season generously with salt and pepper.
2.Make the cream sauce: In a saucepan over medium heat, combine the heavy cream, Dijon mustard, blue cheese, garlic, and dried onions. Cook until the cheese has melted and the sauce has started to thicken, then reduce the heat to low.
3.Heat a grill pan or large skillet over medium-high heat. When the pan is hot, sear the steaks for 4 to 6 minutes on each side for medium-rare, or until the desired level of doneness is reached.
4.Top each steak with one-quarter of the cream sauce and garnish with one-quarter each of the blue cheese and chives before serving.

tip: For best results, let the steaks come to room temperature before cooking.
