    Sautéed Asparagus with Mushrooms and Bacon

    makes 4 servings · prep time: 10 minutes · cook time: 20 minutes

    Why discard bacon drippings when you can cook your food in them? When we make bacon, we save the rendered fat in a jar and use it for cooking veggies and eggs. Delicious!

    ingredients

    • 4 slices bacon, chopped
    • 4 ounces mushrooms, thinly sliced
    • 2 cloves garlic, minced
    • 1 pound asparagus, ends trimmed
    • Sea salt and ground black pepper (optional)

    directions

    1.In a large skillet over medium heat, cook the bacon until crispy. Using a slotted spoon, remove the bacon from the pan and set aside.
    2.Add the mushrooms and garlic to the hot drippings in the skillet. Sauté until the mushrooms are tender and have released their liquid, about 5 minutes.
    3.Add the asparagus and cooked bacon to the skillet and sauté until the asparagus is crisp-tender, about 10 minutes. Taste and season with salt and pepper, if desired.

    tip: This dish is also amazing made with broccoli.
