    Chocolate Chip Cookies for Two

makes 2 cookies (1 per serving) · prep time: 5 minutes · cook time: 20 minutes

Cookies for two: perfect for a romantic low-carb date night or for those random times you are hit with a relentless sweet tooth. It’s guilt-free indulgence at its finest. I love to eat these cookies fresh out of the oven, topped with a dollop of fresh whipped cream (see here).

    ingredients

    • ¼ cup blanched almond flour
    • 2 tablespoons butter, softened
    • 2 tablespoons granular erythritol
    • ½ teaspoon pure vanilla extract
    • Pinch of sea salt
    • 2 tablespoons sugar-free dark chocolate chips

    directions

1.Preheat the oven to 350°F. Lightly grease two 4-inch ramekins.
2.Place the almond flour, butter, erythritol, vanilla extract, and salt in a small mixing bowl. Mix by hand until the ingredients are well incorporated. Fold in the chocolate chips.
3.Divide the batter equally between the ramekins, then place the ramekins on a rimmed baking sheet for stability. Bake for 20 minutes, or until golden brown on top. Serve in the ramekins and eat with a spoon.
