    Strawberry Balsamic Vinaigrette

    makes 1¼ cups (2 tablespoons per serving) · prep time: 10 minutes

    Fresh, light, and super easy to make—this is my kind of dressing! If this vinaigrette is thicker than you like it, slowly add water as you blend it to get it to the consistency you prefer.

    ingredients

    • ½ cup light olive oil or avocado oil
    • 1/3 cup sliced strawberries
    • ¼ cup balsamic vinegar
    • 1 tablespoon plus 1 teaspoon Dijon mustard
    • 1 tablespoon fresh lemon juice
    • 1 clove garlic, minced
    • 1 small shallot, minced
    • ½ teaspoon sea salt
    • 1/8 teaspoon ground black pepper
    • Pinch of red pepper flakes

    directions

    Place all of the ingredients in a blender or food processor and pulse until well blended and smooth. Store in the refrigerator for up to 2 weeks.
