In my book, hollandaise is the perfect keto condiment. It is high in fat and tastes good on just about everything—equally good over eggs as it is over a perfectly grilled, juicy steak. It is also amazing over roasted vegetables and on salmon.
• 4 large egg yolks
• 2 tablespoons fresh lemon juice
• Pinch of mustard powder
• Dash of hot sauce
• ½ cup (1 stick) salted butter, melted
1.Place the egg yolks, lemon juice, mustard powder, and hot sauce in a blender. Pulse until the ingredients are well combined.
2.Turn the blender to high and slowly pour in the melted butter. Blend until the sauce is thick, about 30 seconds. Store in the refrigerator for up to 2 weeks.
tip: To reheat this hollandaise and prevent the eggs from scrambling, heat it in the microwave on 30 percent power in 30-second intervals.
