    Eggplant Chaffles

    Ingredients

    • Eggplant – 1 medium
    • Eggs – 1
    • Cheddar cheese – 1 ½ cups

    Preparation Method

    1. Boil eggplant for 15 min then blend
    2. Preheat waffle iron
    3. Mix listed ingredients in one bowl
    4. Grease waffle iron, pour mixture and cook till crisp
    5. Takes 10 min to prepare and serves 2 – serve hot
