Veggie Sandwich Chaffles

Ingredients

• Mozzarella cheese (shredded) – 1 cup
• Eggs – 2

For vegetables

• Tomato (sliced) – 1 small
• Onion (sliced) – 1 small
• Cauliflower – 1 cup
• Black pepper (as desired)
• Salt (as desired)

For sauce

• Oyster sauce – 1 tablespoon
• Ketchup – 2 tablespoons
• Monk fruit/swerve – 1 teaspoon
• Worcestershire sauce – 2 tablespoons

Preparation Method

1. Mix ketchup, Swerve/Monk fruit, Worcestershire sauce and oyster sauce in a bowl
2. Boil cauliflower, strain excess water then add pepper and salt for taste
3. Pre-heat and grease waffle maker
4. Mix eggs and chaffle ingredients in one bowl
5. Pour mixture onto waffle plate and spread evenly and cook till crunchy
6. Allow the chaffles to cool for a minute then serve with already prepared vegetables and sauce
