What you will need:
• 1/3 cup butter
• 1 oz cream cheese
• 1/3 cup Swerve Sweetener
• 1 egg
• tsp vanilla extract
• 1 tsp almond extract
• 1 cup coconut flour (or half coconut half almond flour)
• 1 tsp baking powder
• pinch of salt
• natural food dye
Directions:
1. Preheat oven to 350 degrees F.
2. Spray 2 cookie sheets with no stick cooking spray, or line with parchment paper and set aside.
3. In a large bowl, combine the dry ingredients, mixing well one at a time. Once they are thoroughly mixed together, add in the wet ingredients, also thoroughly blending after you add in each ingredient.
4. Continue to mix as a dough forms. Once it is the right consistency, take a spoon and place rounded cookies on each cookie sheet about 2 inches apart per row. Only make 2 rows.
5. Place in the oven and bake for 8 – 10 minutes.
6. Remove from oven and place on rack to cool.
