Almond Joys

    What you will need:

    • ½ Cup of Butter, softened
    • ⅔ Cup of Sweetener
    • ⅔ Cup of Ricotta Cheese
    • 2 Cups of Almond Flour
    • 2 Teaspoons of Vanilla Extract
    • 1 Teaspoon of Almond Extract
    • 1½ Teaspoons of Baking Powder
    • 1 Egg


    1. Preheat oven to 350 degrees F.
    2. Spray 2 cookie sheets with no stick cooking spray, or line with parchment paper and set aside.
    3. In a large bowl, combine the dry ingredients, mixing well one at a time. Once they are thoroughly mixed together, add in the wet ingredients, also thoroughly blending after you add in each ingredient.
    4. Continue to mix as a dough forms. Once it is the right consistency, take a spoon and place rounded cookies on each cookie sheet about 2 inches apart per row.
    5. Only make 2 rows.
    6. Place in the oven and bake 15 minutes.
    7. Remove from oven and place on rack to cool.
