INGREDIENTS:
• 12 eggs
• ½ cup avocado, mashed until smooth
• 4 slices bacon
• 2 tbsp. shredded cheddar cheese (if not dairy-sensitive)
• 1 tbsp. mustard
DIRECTIONS:
• Place eggs in a saucepan and cover with cold water. Bring water to a boil, then immediately remove it from heat. Cover and let the eggs stand in hot water for 10 to 12 minutes. Remove from hot water and rinse eggs under cold running water to cool.
• Meanwhile, place the bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Crumble and set aside.
• Peel the hard-cooked eggs and cut them in half lengthwise. Remove the yolks and place them in a small bowl. Mash egg yolks with avocado, crumbled bacon, and cheese. Stir in mustard.
• Fill egg white halves with the yolk mixture and refrigerate until serving. It makes 12 servings.
