Ingredients
• 4 Tbsp. cocoa powder
• 1 cup shredded coconut
• 1 cup hazelnuts
• 1 tsp. peppermint extract
• 6 Tbsp. coconut oil, melted
• 4 Tbsp. almond butter
• 3/4 cup Stevia sweetener (or some other natural sweetener of your choice)
• 1 teaspoon vanilla extract
• pinch of salt
Preparation
1. In a large bowl, stir together the coconut oil, cacao powder, almond butter, sweetener, vanilla, peppermint extract, and salt. Chop the hazelnuts in a food processor.
2. Heat the mixture slowly on low heat over simmering water (double boiler) for 5 to 10 minutes until all ingredients are well combined.
3. Add hazelnuts and shredded coconut to the melted chocolate mixture and stir together.
4. Pour into a dish lined with parchment and freeze until the chocolate is set, then cut into sticks.
