Ingredients
• 1 cup coconut milk
• 1 cup almond butter
• 1 teaspoon pure vanilla extract
• 3/4 tsp. cinnamon
• 1/2 tsp. nutmeg
• 1 teaspoon natural sweetener (to your taste)
• 1 cup coconut shreds
Preparation
1. In a double boiler over medium heat, place all the ingredients (except shredded coconut). Stir all the time to melt, and combine well.
2. When ready, remove from the heat. Let it cool for 5–6 minutes. Place the bowl in the fridge for about 45 minutes until it is hard.
3. In a bowl, put the coconut shreds. Roll the coconut-cinnamon mixture into one-inch balls and roll them through the coconut shreds.
4. Place the balls on a serving plate and refrigerate for 2-3 hours.
