Ingredients
• 1/4 cup shredded coconut, unsweetened,
• 1 cup cream cheese
• 1 tablespoon pure lemon extract
• Natural sweetener of your choice, to taste
• 1/4 cup butter
Preparation
1. In a bowl, combine cream cheese, natural sweetener and lemon extract. Blend all ingredients together well with mixing spoon. Place bowl in refrigerator for 15–20 minutes.
3. In a bowl, place unsweetened shredded coconut. Roll lemon batter into 16 equal balls.
4. Dip each ball into coconut and place on a serving pan. Refrigerate for 3–4 hours at least. Serve.
