Ingredients
• 3/4 cup cream cheese, softened
• 1/4 cup butter, softened
• 1/2 cup strawberries, fresh or frozen
• 1 tablespoon pure vanilla extract
• 10–15 drops liquid Stevia
Preparation
1. In a mixing bowl, place the butter and the cream cheese and leave at room temperature (about 45 minutes) until softened. Do not microwave the butter!
2. In a separate bowl, place the strawberries and mash using a fork.
3. Add the liquid stevia and vanilla extract and mix well. Add the strawberries to the bowl with softened butter and cream cheese. Whisk until all the ingredients are well combined.
4. Pour the strawberry mixture into muffin silicon molds. Place in the freezer for about 3–4 hours.
5. Before serving, unmold the strawberry muffins and place them on a serving dish. Keep refrigerated.
