Breading Kohlrabi & Bacon Rind Balls


    • 1 lb. smoked bacon, crumbled
    • 5 cups kohlrabi, minced
    • 1 cup pork rinds, crushed
    • 2 1/2 cup grated Parmesan cheese
    • 4 oz Mascarpone cheese
    • 4 cloves garlic, minced
    • 1 cup cream cheese
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • salt and freshly ground black pepper to taste


    1. Chop or blend kohlrabi.
    2. In large mixing bowl, combine kohlrabi, bacon, cream cheese, mascarpone cheese, 1 cup grated Parmesan, minced garlic, salt and pepper to taste. Mix until all the ingredients are well incorporated. Refrigerate for 2–3 3 hours.
    3. For breading: In a bowl, combine crushed pork rinds, remaining 1 cup Parmesan cheese, onion powder and garlic powder.
    4. Remove the kohlrabi mixture from the fridge and prepare about 30 even balls.
    5. In a frying pan, heat the oil. Roll each ball in Parmesan breading mixture until well coated and evenly coated. Fry the kohlrabi balls until they are a nice, even golden brown all over. Place on a serving plate and serve hot.
