    Keto Berry Smoothie

    yield: 1 serving
    prep time: 5 minutes

A lot of people think you can’t have smoothies on keto, but it’s actually really easy to make a great low-carb, high-fat smoothie.

    • 1 cup baby spinach leaves
    • 1 cup unsweetened almond milk
    • ½ cup ice
    • ½ cup fresh blackberries or other berries of choice, plus extra for garnish if desired
    • ¼ cup raw pecan halves
    • 1 tablespoon MCT oil
    • ¼ teaspoon vanilla extract
    • ⅛ teaspoon liquid stevia
    • Unsweetened coconut flakes, for garnish

    1. Place all the ingredients in a blender and blend on high speed until smooth and creamy, about 1 minute. Pour into a 16-ounce glass and serve immediately. Garnish with coconut flakes and berries, if desired.

    Notes:

You can experiment with a variety of nuts, berries, and extracts to create different smoothie flavors.
