Ingredients:
• 12 Ounces Spanish Chorizo Sausage, Diced
• ¼ Cup Butter, Unsalted
• 2 Hardboiled Eggs, Large & Diced
• 2 Tablespoons Mayonnaise
• 2 Tablespoons Chives, Chopped
• 1 Tablespoon Lemon Juice, Fresh
• 4 Avocado Halves, Pitted
• Sea Salt to Taste
• Cayenne Pepper to Taste
Directions:
1. Fry your chorizo over heat for five minutes before placing it to the side. Get out a bowl and combine all of your ingredients, mashing it together. Make sure not to add in your avocado halves. They’re for serving.
2. Refrigerate this mixture for a half hour before filling each avocado half. Serve chilled.
