Ingredients:
• 3½ oz. full-fat cream cheese
• ¼ cup unsalted butter
• ¼ cup Manchego cheese, grated
• ¼ cup sun-dried tomatoes, drained, chopped
• ¼ cup green olives, pitted, sliced
• 2 tbsp. capers, drained
• 1 garlic clove, crushed
• 1/3 cup flaked almonds, raw or toasted
• Pepper to taste
Directions:
1. Mix butter and cream cheeses until smooth.
2. Add the next five ingredients. Season with pepper. Mix well.
3. Refrigerate for 30 minutes. Make 6 balls out of the mixture.
4. Roll each ball in the almond flakes. Serve.
