Ingredients
• 1 cup of shredded coconut (dry)
• 1/4 cup of coconut oil
• 3 tbsps. of erythritol sweetener (powdered)
• 1 tbsps. of lemon zest
• 1 pinch of salt
Directions:
1. Add the coconut in a high-power blender.
2. Blend until creamy for fifteen minutes.
3. Add sweetener, coconut oil, salt, and lemon zest. Blend for two minutes.
4. Fill small muffin cups with the coconut mixture.
5. Chill in the refrigerator for thirty minutes.
