Ingredients
• 16 oz. skirt steak
• 4 oz. pepper jack cheese
• 1 cup sour cream
• 1 handful fresh cilantro
• 1 tbsp. extra virgin olive oil
• 1 splash chipotle tabasco sauce
• Salt and pepper to taste
Homemade Guacamole
• 2 avocado(s)
• 2 tsp. lime juice
• 2 tbsp. fresh cilantro
• Salt and pepper to taste
Directions
1. Season your skirt steak to taste with salt and pepper. Then, on high heat, heat a cast iron skillet. Add olive oil when the skillet is hot and cook the skirt steak for around four minutes on each side.
2. Place it on a plate to rest while you prepare the guacamole. Slice the steak against the grain and make it into bite-sized strips. Divide the same into four equal portions.
3. Add the cheese to the top portion. Follow that with ¼ cup of guacamole and ¼ cup of sour cream. Splash each portion with some chipotle tabasco sauce (not necessary) and fresh cilantro.
4. Prepare the guacamole and serve with low carb tortillas. For homemade guacamole, remove the pit from the avocado and then mash the content. Add the rest of the ingredients and serve.
